Rocky Mountain or Prarie Oysters

I spent part of my childhood on a ranch in Colorado. Every year, after all the cows had their calves, we’d round up the young and prepare to brand them. During this process, all the male calves would have their testicles removed and collected in a bucket of ice water. My grandfather, who owned

the cattle and the ranch, had a deal with a local restaurant where we would bring them the bucket to be processed and cooked for the family and those who helped with the branding. So, at the age of six, I had my first taste of Rocky Mountain Oysters (http://en NULL.wikipedia NULL.org/wiki/Rocky_Mountain_oysters).

After the testicles are washed and peeled they’re usually coated in flour and deep fried whole, or sliced and cooked in a frying pan. The idea of ever cooking these up was invented by your old-time  cowboys who used to throw them whole on a stove and cook them until they popped.

Yes, they were probably the most disgusting food I’ve ever had, but on the whole they weren’t too bad. But, then again, with enough horseradish and ketchup, you can make anything taste good.
